I am loving to hear the stories from people at Northway Church doing the Daniel Fast!

I can’t wait to see what God does through our church as we lean in to Him.

This is going to stretch all of us, but WE ARE GETTING STRONGER!

Here is a popular Daniel Fast approved vegetarian chili recipe… I will be posting some more recipes soon, including the one mentioned in the video…

Vegetarian Chili

Ingredients:
2 medium-sized green peppers, chopped
1 medium-sized yellow onion, chopped
1 zucchini, sliced
1 yellow squash, sliced
2 tablespoons olive oil
2 tablespoons chili powder
¾ teaspoon salt
¼ teaspoon ground red peppers
2 cups corn kernels (fresh or frozen)
2 16 oz. cans tomatoes (juice and all)
2 16 oz. cans pinto beans (juice and all)
2 16 oz. cans black beans (juice and all)
1   4 oz. can mild green chilies
1   4 oz. can of tomato paste

Chop and sauté in oil the peppers and onions. Add the sliced squashes, chili powder, salt, ground red peppers, and corn. When all the vegetables are soft but still firm, add the tomatoes, all the beans, the green chilies, and the tomato paste. Stir until just blended.  Bring to a boil and then reduce the heat. Let simmer for 20 minutes stirring occasionally to prevent sticking.
Yield: 6 generous servings

    Thank you for your encouragement (the clip) and the recipes. Not only is this a great spiritual discipline, but it is a healthy way to start 2010. My fast will probably be interrupted by a vacation to FL next week, but I promise I will resume the fast when I return. Thank you Pastor Buddy for your leadership in spirituality and healthy living. Hope your quest for the healthiest year ever is going well.

    It has been quite an interesting past few days since we started the fast. It has been a bit stressful preparing meals for my husband and I (the kids did try a couple of things too)..but after 5 days of fasting…I can feel God cheering me on. It is so funny how he shows himself in such subtle ways that you can only see if you are seeking him!!! Thanks for your comforting video clip. Yes, I too have been a bit edgy, especially when I sit across from my kids at the dinner table and they are eating burgers and pasta!! HEE HEE…..PRAISE GOD!!

    I made this chili recipe as our family is fasting. Wow, it makes alot!! We ate it over brown rice…really good…at least the first few times we ate it. :)
